A Mince Pies Tip from Jane
For speedy, tasty mince pies, buy jars of good quality ready-made mincemeat and packs of good ready-made pastry. Spoon the mincemeat into a mixing bowl and add some dried cranberries, cherries, a little brandy or whatever you like.
Roll out the pastry and cut cases. Fill with a little mincemeat and top with cut-out pastry stars – much easier than trying to get tops to fit and seal.
If you want to get ahead, buy ready-made – but not frozen – pastry, then once the pies are made you can freeze them in the tins, pack them in plastic bags once solid and simply take them out on the day, place in tins and bake.
