Beetroot, Avocado and Walnut Salad Recipe

Simple, easy and delicious!

Beetroot-Avocado-Walnut-SaladMakes: 6 servings

Preparation Time: 5 minutes

Ingredients

  • 50g Whitworths walnuts
  • 1 x 60g bag rocket
  • 1 x 300g cooked beetroot, diced
  • 100g feta cheese, diced
  • 200g baby plum tomatoes, halved
  • 2 avocados, peeled, stoned and diced
  • olive oil
  • freshly ground salt and pepper

Method

  1. Layer the ingredients onto your serving dish. We’ve used rocket, tomatoes, beetroot, avocado, beetroot then feta and crushed walnuts over the top.
  2. Grind salt and pepper over then drizzle with olive oil and serve.
