Preparation Time: 5 minutes
- 50g Whitworths walnuts
- 1 x 60g bag rocket
- 1 x 300g cooked beetroot, diced
- 100g feta cheese, diced
- 200g baby plum tomatoes, halved
- 2 avocados, peeled, stoned and diced
- olive oil
- freshly ground salt and pepper
- Layer the ingredients onto your serving dish. We’ve used rocket, tomatoes, beetroot, avocado, beetroot then feta and crushed walnuts over the top.
- Grind salt and pepper over then drizzle with olive oil and serve.
