Christmas Cupcakes by Jane Asher

Make your own festive cupcakes for Christmas with this recipe by Jane Asher.

Equipment – all from Jane Asher’s range

  • Christmas cookie cutters
  • Small sieve
  • Rolling pin
  • Non-stick baking paper
  • Mixing bowl
  • Wooden spoon
  • Whisk
  • Spatula
  • Ice cream scoop
  • Bun tin
  • Cooling rack


  • 100g spreadable butter
  • 100g castor sugar
  • 2 medium eggs
  • 125g self-raising cake flour
  • 1 tsp baking powder

For the butter icing

  • 100g softened butter
  • 200g icing sugar
  • A little milk, fruit juice and zest or vanilla extract


  1. Pre-heat the oven to 180°C (160°C fan assisted, 350°F, gas mark 4). Place 12 paper cases into a muffin or bun tray
  2. Simply put all the ingredients into a mixing bowl and beat well together, first with a wooden spoon then with a whisk until well mixed and smooth.
  3. With an ice cream scoop, divide the mix between the paper cases, scraping the bowl with a spatula, and bake for 15-20 minutes until the tops are golden. Transfer to a rack to cool completely before icing

For the butter icing

  1. Put the butter and sieved icing sugar into a mixing bowl and blend together with a wooden spoon, adding a few drops of milk. Once the icing sugar is incorporated, beat the mixture hard until it is light and fluffy. For flavoured icing, replace the milk with a little lemon or orange juice plus a little zest, or vanilla extract.
  2. Either spoon a little onto the top of each cupcake or, using a piping bag with shell nozzle, pipe on the tops in swirls.
