Victoria Sponge Cake by Jane Asher

Make your own Victoria sponge cake using this recipe by Jane Asher.

Equipment – all from the Jane Asher range

  • Mixing bowl
  • Wooden spoon
  • Whisk
  • 2 x non-stick 7” sandwich tins
  • Non-stick paper circles
  • Spatula
  • Cooling rack
  • Silver cake board

Ingredients

  • 3 medium eggs
  • 175g butter, softened or spreadable butter (Jane uses lightly salted)
  • 175g castor sugar
  • 175g self-raising flour
  • 1-2 tsps vanilla extract
  • 1 tbsp milk

Or use

  • 1 packet Jane Asher Victoria Sponge Mix
  • 2 medium eggs
  • 170ml milk
  • 1 tbsp (15ml) oil

To decorate

  • 150g icing sugar or 1 packet of Jane Asher vanilla icing mix
  • 80g butter, softened
  • Jane Asher hundreds and thousands
