To make super creamy scrambled eggs, beat the eggs in a bowl with salt and pepper and melt a generous portion of butter in a frying pan on low heat. Add the eggs and stir gently, cooking them ‘low and slow’ to achieve the perfect fluffy texture. Butter the toast, sprinkle the eggs with fresh chives or finely grated cheese for a little extra flavour and take them straight to her in bed. You can’t go wrong!

2) Fruity Yogurt Parfait

For a refreshing, fuss-free Mother’s Day breakfast, a fruity yoghurt granola bowl is a perfect choice—especially for younger kids. No hot pans, just simple layering!

Simply mash a ripe banana with 100g of oats, 2 tablespoons of honey, 1 tablespoon of coconut oil, 50g of chocolate chips or raisins, and a pinch of salt. Leave the mixture to rest for 10 minutes, before rolling into approximately 7 balls.

Place these on a baking sheet, flatten gently until they’re about 1cm thick, and bake at 170C for 15 minutes until the cookies are golden, for a soft, chewy breakfast cookie. With adult supervision and wearing oven gloves, take the tray out and leave the cookies to cool.
